Rolf Jaeggi, the Executive Chef of Marco Polo Hotels – Hong Kong, integrates a wide variety of the freshest seafood including lobster, shrimp, clams, mussels and squid, together with saffron, the requisite seasoning to present the classic paella, cooked with a specialised shallow pan.
By adding fresh tomatoes and bell peppers, the dish is amazing with its colourful presentation, showcasing the rich and vibrant culture of Spain.
